Who doesn’t love chocolate? Especially as a decadent treat or dessert on Valentine’s Day! I’m a sucker for brownies, so I got to thinking how I could create a healthier alternative that I can indulge in and not feel guilty for it! Biting into these brownies, you’d never guess they were flourless and made with 2 secret ingredients: avocados and beans! Crazy, right?! Real, nutrient dense food in a brownie that tastes good? Yes!
Obviously, avocados and beans aren’t foods you normally associate with brownies or any sweets for that matter. They create a texture and sweetness reminiscent and more in line with fudge brownies, minus the extra sugar! And, you can’t even taste them inside! I’m warning you now…they’re so good, you may want to make two batches–one for you and one for your Valentine! And if you find yourself sneaking one or two in for breakfast or as a pre/post workout snack, go for it- that’s why I made them myself! 😉
So, here it is. Let me know if you’re feeling adventurous enough to give them a try!
Ingredients
- 1 egg
- 2 large egg whites (6 tbs egg whites)
- 1/4 cup maple syrup
- 1/4 cup almond milk
- 1 tbs liquid stevia extract
- 2 tsp vanilla extract
- 1 tbs coconut oil
- 2/3 cup raw cacao powder
- 1 scoop (30g) chocolate protein powder (I used a custom whey isolate protein blend from True Nutrition)
- 1 can beans, rinsed and drained**
- 1/2 large ripe avocado
- 1/4 tsp of baking powder
- A few sprinkles/dash of cinnamon
**All I had in my pantry were white kidney beans, but you can use any type you have- black, red, chickpea, etc…
Heat your oven on bake to 325 degrees. In a blender, combine the ingredients until you get a smooth, thick batter. You can pour the batter into a brownie pan or into a large muffin pan, like I did. The batter makes 12 small brownies. (Next time, I think I’ll make 6 medium ones instead.)
Bake in your oven for 20-25 minutes. Pair it with wine, a coffee drink or almond milk and enjoy!
